Culinary guide to Siem Reap

Fish Amok - a fish mousse with fresh coconut milk and kroeung, a type of Khmer curry paste made from lemongrass, turmeric root, garlic, shallots, galangal and fingerroot, or Chinese ginger. This is the classic Cambodian dish.

Beef lok lak - a Cambodian beef stir fry with onions, cucumbers and tomatoes, and dipped in a sauce containing lime juice, salt and pepper. It is commonly served with a separate plate of lettuce.

Num Banh Chok - a Cambodian typical breakfast food consists of rice noodles and coconut-based fish curry soup made with kroeung. Fresh mint leaves, bean sprouts, green beans and cucumbers are heaped on top.

Bai Sach Chrouk - a dish made from sweet, sticky grilled pork, slowly barbecued over charcoal, sliced up, and spread over a generous mound of white rice, with pickled cucumber and carrot, and chilli sauce on the side.
